Description
Located in Shizuoka, Japan’s most important tea-growing region, Kawane is the country’s top-notch tea producing region, where the finest Tencha is produced in the spring from the Yabukita and Okumidori varieties. Tea plants are shaded for three weeks, after which the leaves are harvested, lightly steamed, sorted and dried. Unlike Sencha or Gyokuro, for example, Tencha is not rolled to preserve as much of its nutrients as possible during grinding. The result is clearly visible in the cup: the bright green powder produces a rich taste with subtle herbal notes but no bitterness at all.
