Yellow tea is the ultimate rarest of tea types. Only the very youngest buds are hand picked before they even develope the white hair surface typical to white tea. The leaves are gently roasted, spread under a damp clothe for a few hours, after which they are effectively dried. Yellow tea resembles mostly white tea in taste, but it is more vivacious, roasty and even wheaty in flavour.
